Every week I send out vegan lunchbox recipes to make packing school lunches less stressful. School lunchboxes can definitely be tricky when you go vegan, especially if you have the double whammy of vegan and nut free.
This week’s recipes are sweet mustard flavoured Chickpea Patties, and fun, green Spinach and Banana Muffins. The patties are great on their own, or if you have older kids with bigger appetites, they make great sandwich fillers.
Both of these recipes are nut free. You can bake them both on a Sunday, and store them in the fridge or freezer for lunches for the week.
