Instructions
Preheat your oven to 180℃. Prepare a baking tray by lining it with baking paper.
Separate out 1 cup of your sourdough starter, and set aside.
Sift flour (and baking soda if using) into a medium sided bowl. Add apple puree, and cut through with a knife until it forms thick crumbs.
Add the grated apple and mix through.
Add the sourdough starter. Mix through to form a dough. You may need to add extra flour or milk, depending on how thick your starter is.
When it has formed a dough, turn it out onto a floured board to knead.
Knead until smooth, adding extra flour if it is sticky. Shape into a disc. Roll out with a rolling pin until the dough is about 2cm thick.
Use a circle cutter, or glass, cut circles from the dough. Place on the prepared baking tray. Allow to sit for approximately 10 minutes to let the scones rise.
Bake for approximately 10 - 15 minutes, until golden browned.
