Vegan Mango Summer Smoothie
This Vegan Mango Summer Smoothie is great to use up any extra mangoes you have lying around in summer. You can even use frozen mango to get that summer feel if it’s a bit colder for you.
One of the great things about smoothies is that you can use slightly older mangoes, so you can make sure they don’t go to waste!
If you’re anything like me, you probably have quite a few mangoes sitting around in summer. For some reason when I was buying ingredients to make Mango Semifreddo, I decided that it would be easier and cheaper to buy a box of 18 mangoes instead of the 4 that I need for the recipe. I think I was suffering from Christmas Shopping stress, or something… Anyway, it meant that I then had an extra 14 mangoes to use up. Let me tell you, we had a lot of mango smoothies that week!
This smoothie uses frozen bananas, but if you don’t have any, you can simply use a normal banana and a cup of ice.

Mango Summer Smoothie
Equipment
- Blender
Ingredients
- 1 cup Plant Based Milk
- 1 cup water
- ½ cup Cashews
- 1 Tbs Maple Syrup
- ⅓ cup Rolled Oats
- 3 Mangoes
- 1 Ripe Banana
- Ice
Instructions
- Add all ingredients to blender, starting with liquids.
- Blend until smooth.
