Chickpea Wrap Three Ways
I don’t know about you, but I always struggle when I’m trying to come up with quick and easy ideas for vegan lunches. I know that salads are a really good option, but sometimes they just take too much effort, and feel just that bit too healthy. Some lunches I just want a sandwich or a wrap, but when you take away meat and cheese, it can be hard to figure out what there is to actually have on one!
A little while ago, I discovered the chickpea tuna salad, and I was hooked. I had it for lunch every day for a week… But then it started to get a bit old, and so I went looking for more ideas.
To Make:
To make enough vegan lunch fillings for the week, simply take two tins of chickpeas and processed them with some vegan mayo. I was able to keep this in the fridge for the week, and then just add some extras each day and I had three very different wraps to try for the week.
This lunch is especially good if you’re juggling kids, and really don’t have time to make a complicated lunch each day. The flavours would also be great for sandwiches for kids.
I think my favourite combination was the asian flavour, but the pesto and avocado flavours are also delicious. Hubby loved all three. Let me know what your favourite flavour is below!

Chickpea Wraps
Ingredients
Chickpeas
- 2 tins Chickpeas drained and rinsed
- 3 tbs Vegan Mayonaise
Pesto Chickpeas
- 1/3 Chickpea Mix
- 1 tbs Vegan Basil Pesto
- 1 handful Rocket washed
- 2 Wraps
Asian Chickpeas
- 1/3 Chickpea Mix
- 1 tbs Peanut Butter
- 2 tspn Soy Sauce
- 1 handful Coleslaw mix
- 2 Wraps
Avocado and Chickpeas
- 1/3 Chickpea Mix
- 1/2 Avocado sliced
- 2 Wraps
Instructions
Chickpeas
- Add chickpeas and mayonaise to food processor. Process until just combined.
- The mix can be stored for up to 4 days in a sealed container in the fridge.
Pesto Chickpea Wrap
- Place chickpea mix in a bowl. Add pesto and stir to combine.
- Divide pesto mix between wraps and top with rocket. Roll to serve.
Asian Chickpea Wrap
- Place chickpea mix in a bowl. Add peanut butter and soy sauce. Mix to combine.
- Divide chickpea mix between wraps and top with coleslaw mix. Roll to serve.
Avocado Chickpea Wrap
- Divide chickpea mix between wraps. Top with half of the sliced avocado each. Roll to serve.
