I honestly find lunches the hardest to find vegan options for. Traditional lunches are so focused on meat and cheese, it’s hard to know what to use instead.
This Vegan Bacon Chickpea Salad Roll is a great replacement for the traditional meat and salad roll. If you make the chickpeas ahead, this is a quick and easy lunch that only takes a few minutes to put together. To be honest, even if you don’t make the chickpeas ahead, it only takes a couple of extra minutes to put them together.
I love to use kale slaw in this salad, but it’s really hard to find on its own without a premade dressing. Unfortunately, the dressing doesn’t tend to be vegan. So you can either use a normal coleslaw salad mix, or make your own kale slaw.
I also use vegan mayonnaise from the supermarket to save time, but again you could easily make your own if you’re after something a bit healthier.
To Make Vegan Chickpea Bacon Salad Rolls
Cook the chickpeas according to the Chickpea Bacon Recipe here.
Mix the coleslaw mix and mayonnaise together in a separate bowl.
Top the rolls with avocado, coleslaw and chickpea bacon, and serve.
If you want to pack these rolls for school or work lunches, I recommend packing the chickpeas, avocado and coleslaw separately, and assemble prior to eating. I find the best way to transport avocado is to cut it into quarters and wrap each in plastic to pack.

Vegan Bacon Chickpea and Salad Roll
- 1 quantity Bacon Chickpeas Recipe
- 4 Bread Rolls
- 2 cups Coleslaw Mix
- 4 Tbs Vegan Mayonnaise
- 1 Avocado
- Prepare Chickpea Bacon (see notes below for recipe) according to instructions.
- Add coleslaw to a medium sized bowl and mix mayonnaise through.
- Slice rolls. Top with coleslaw, sliced avocado and chickpeas.
