This recipe came about one lunch time when I was really craving a pizza, but really didn’t have the time to make one from scratch.
I had all the toppings ready on hand, but no bases. Then I had the idea of putting the toppings on bread for a toasted sandwich instead, and it really hit the spot.
This recipe works really well with have leftover burger patties. I find they give it a really meaty pizza flavour, and pair really well with the olives and pineapple in the recipe.
Of course, you can use any ingredient combination you want. Given it’s basically a vegan pizza in a toastie, the sky is the limit for toppings. If you prep the toppings at the start of the week, this recipe is an easy option for lunch all week.
I use a cashew based mozzarella from It Doesn’t Taste Like Chicken. Any vegan mozzarella recipe will work, or you could just use a store bought vegan cheese.
This is a single serve recipe, but you can easily double, or more, the recipe to serve the whole family. Switch up the ingredients to serve what your kids like, and you’ve got an easy lunch, or even dinner.
- 2 Slices Bread
- 1 Tbs Tomato Paste
- 2 Small Vegan Meatballs
- 1 tspn Sliced Olives
- 1 Tbs Pineapple Pieces
- 2 Tbs Vegan Mozzarella
- Spread one slice of bread with tomato paste. Top with mozzarella. Layer meatballs, olives and pineapple on top.
- Toast sandwich in a sandwich toaster.
