This vegan banana and berry smoothie is my go to breakfast at the moment while I get back into the swing of school drop offs.
We are definitely very out of practice at getting out of the house on time after nine weeks of home schooling, so I need something really quick and easy that I can grab as I rush out the door.
I normally make this smoothie with frozen bananas, strawberries and baby spinach. I love using frozen fruit and spinach because it makes the smoothie nice and cold and creamy (especially the banana!). Plus as an added bonus, you don’t end up with fruit turning to mush in the fruit bowl (I swear I’m not the only one…).
I don’t know how many times I’ve bought baby spinach, only to have it go slimey in the fridge before I get to it… These days, I buy a 1kg box from the fruit markets and throw it all into ziplock bags in the freezer.
If you don’t have frozen fruit, you can make this vegan Banana Berry Smoothie with fresh. Just add some ice to keep it cool.
Add ins and Substitutuions
I normally make this with 1 cup of soy milk and 1/2 cup of water, just so I’m not using so much soy milk at a time! It certainly gets expensive if you make multiple smoothies a day!
If you like your smoothie sweeter, you can add in one or two dates, or some drops of stevia. I often add some vanilla protein powder, especially if I have a busy day.
To Make Vegan Banana and Berry Smoothies
Add all ingredients to the blender, starting with the milk and water. The liquid helps the rest of the ingredients blend better.
Blend until smooth. Enjoy 🙂
Banana Berry Smoothie
- 1 cup Soy Milk or other plant based milk
- ½ cups Water optional
- 1 Handful Baby Spinach
- 1 Whole Banana Frozen
- 8 Strawberries
- 2 Tbs Cashews
- ¼ cups Rolled Oats
- Add ingredients to a blender starting with the liquid to help it mix.
- Blend until smooth and serve.
